Place parchment paper on a cookie sheet or baking pan.
Twist the Oreo cookies apart so that you have two halves. I removed the cream from the middle and discarded it but I think it would work if you left it on as well.
Arrange the Oreo cookie halves on the parchment lined baking sheet.
Add the white chocolate chips to a microwave-safe bowl, and heat in 30 second intervals, stirring between each heating session, until fully melted. You could also use a double boiler on the stove top to melt the white candy melts.
Immediately pour melted chocolate over Oreo cookies, slowly, starting in the middle, and moving to the sides in an even layer. Use the spoon to help spread it across all of the cookies.
Immediately top with pastel m&m candy. (or other toppings of your choice!)
Transfer the entire pan to the refrigerator, and chill for one hour.
Remove, and cut into small pieces with a sharp knife. Enjoy!
