Original Texas Caviar Recipe

This simple original Texas Caviar recipe is made with two types of beans, corn, and loads of fresh ingredients with a simple dressing. Serve with tortilla chips.

Ingredients
  

Dressing

For the Dip

  • 15 oz can black beans, rinsed and drained
  • 15 oz can black eyed peas, rinsed and drained
  • 15 oz can sweet corn, drained
  • 10 oz package cherry tomatoes
  • 2 avocados, pitted and diced
  • 1 red bell pepper, diced
  • ½ red onion, diced
  • 1 jalapeno, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 lime, juiced

Instructions
 

  • Slice the tomatoes and dice the avocadoes and the rest of the vegetables.
  • Chop the cilantro.
  • Add the dressing ingredients to a large bowl, and stir well to combine.
  • Add the rest of the ingredients to the bowl, and juice the lime into the bowl.
  • Gently toss the ingredients together.
  • Refrigerate for 1 hour, or until ready to serve. Serve with tortilla chips.
