Pumpkin Spice Steel Cut Oats

A hearty healthy whole foods breakfast the whole family will love! Easily made vegan or plant based by using a milk alternative such as almond, oat or coconut milk.

  • 1 cup Bob's Red Mill Quick Cooking Steel Cut Oats
  • 2 cups water
  • ½ cup pumpkin puree
  • ½ teaspon pumpkin pie spice or use 1 tspn if you would like a stronger flavor
  • 1 splash milk (optional) may also use a plant based milk
  • 1-2 Tablespoons maple syrup (optional) may also use honey or other sweetener of your choice
  • cup chopped nuts such as pecans or walnuts (optional)


  • Put 2 cups of water in saucepan and bring to boil.
  • Add 1 cup of quick cooking steel cut oats, ½ cup pumpkin pureen and ½-1 teaspoon of pumpkin pie spice to boiling water.
  • Bring back up to a boil, then place lid on top, turn down to simmer and simmer for 7 minutes, stirring occasionally.
  • After 7 minutes of cooking time, add optional sweetener if using such as maple syrup or honey and stir in.
  • Dish up 4 equal serving sizes into bowls.
  • Add optional ingredients to your liking to each bowl, such as a splash of milk and/or chopped nuts as a topping.
  • Serve and Enjoy!
