Winter Squash: One of the Easiest Vegetables to Grow! If you are new to vegetable gardening, winter squash is one of the easiest things that you can grow. It is also easy to store for a long time, in a cool dark place. It is also a food where you get a lot of bang for your buck. Spaghetti squash is one of those winter squashes! And it is always good to have a couple recipes on hand for how to use it, so that you don’t grow tired of it quickly. And who doesn’t love alfredo sauce? I hope you enjoy this recipe that I have chosen to feature this week! It has another added benefit of being low carb and keto friendly! How to Cook Winter Squash in an Instant Pot – Farm Fresh Tuesday (#28)

This week in our Farm Fresh Tuesday Blog Hop, I am featuring a post that shares how to cook a winter squash in an instant pot! Perfectly timed before Thanksgiving! Winter Squash for Thanksgiving Thanksgiving is just a little more than a week away, and many people will be cooking winter squash for the holiday. But why take up an extra burner on the stove? Use your instant pot, and get the job done quickly and efficiently! Also a great idea for those busy week day evenings! Pressure Cooking Winter Squash There are several ways to cook winter squash in a pressure cooker or instant pot. You can leave it whole or halve it, which might work well for spaghetti squash, delicata or acorn squash. Or you can cube it, which might work better for butternut, jarrahdale, sweat meat or blue hubbard. See our featured post down below for more info on how to cook a halved squash. Increase the time to 25 minutes for a whole squash, and let it naturally release for at least 10 minutes. For cubed squash, peel and seed the squash or pumpkin, cut into 1″ cubes, add to pressure cooker with 1 cup of water. Cook on high pressure for 3 minutes if you want them to hold their shape or for 4 minutes if you plan to mash them or want them softer. Than do a quick release. Fall Salad with Pears and Curried Cashews Recipe – Farm Fresh Tuesday (#24)

This week in our Farm Fresh Tuesday Blog Hop, I am featuring an amazing recipe for a Fall Salad with Pears and Curried Cashews! This sounds sooooo good! Fall Foods = Salads? I know when fall rolls around, that all I crave are warm dishes like soups and stews. But we must remember to eat our veggies! Even though I am a pescatarian (a vegetarian who eats seafood), I still sometimes struggle to get in enough veggies. A hearty salad is just one way to do this. This recipe (scroll down for link to my featured article this week) for a Fall Salad with Pears and Curried Cashews caught my eye in last weeks blog hop, and I have it on my list to give it a go in the next week. Even though it calls for bacon bits, it’s easy to omit them for a veggie/vegan/plant based option. One of my all time favorite hearty salads is this Galicky Kale Salad with Crispy Chick Peas that are seasoned with Indian spices from Minimalistic Baker. So when I saw this salad with the curried cashews, I was instantly interested!
